NOLA Irish Channel Stout Chili


It doesn’t get very cold in New Orleans, but when it does, a nice hot bowl of chili definitely warms you up as well as fills you up! We decided to make a thick and hearty chili with NOLA Brewing Company’s Irish Channel Stout, a rich beer with a sweet malty backbone and pleasant flavors of chocolate and roasted malts, which is the perfect addition to this delicious chili!


NOLA Irish Channel Chili


INGREDIENTS:

  • 2 lbs ground sirloin

  • 1/2 lb thick cut bacon

  • 1.5 lbs Holy Trinity (celery/onion/bell pepper)

  • 8 oz NOLA Brewing Company’s Irish Channel Stout, (drink the rest of course)

  • 1.5 cans diced tomatoes

  • 1.5 cans tomato sauce

  • 2 tbsp cajun seasoning of choice (we used Tony’s)

  • 1 tbsp dark chili powder

  • 1 tbsp cumin

  • 1 tbsp salt

DIRECTIONS:

  1. Add diced bacon to a pot and fry to desired crispiness.

  2. Add the sirloin to the pot and cook until brown.

  3. Remove meat from the pan and strain.

  4. Cook down the onions, celery, and bell peppers until reduced down, then add seasonings.

  5. Add beer and bring to a simmer.

  6. Slowly add meat back to pot while stirring constantly to mix thoroughly.

  7. Add tomato sauce and diced tomatoes and simmer until desired thickness.

While eating this chili, crack open a NOLA Brewing Company Brown Ale, which pairs quite nicely!
